In Brazil this sweet is called Suspiro and translated it basically means merengue but it's definitely more than just an ordinary merengue. It's a glob of sweet marshmallowy fluffiness that just melts in your mouth, so let's call it suspiro. My mom used to make these for my birthday as a kid so it just reminds me of my childhood. Hope you enjoy it.
Ingredients:
- 2 eggs (you will only be needing the whites)
Directions:
- Separate the yolk and the whites into two separate bowls, you can either store the yolk for something else or simply throw it away because we will only be needing the whites.
2. With an electrical beater beat the whites at high speed, you should beat the whites for about five minutes or until quite firm.
3. Keep beating and gradually add the sugar
4. You should keep beating until the whites are really thick. A way to test if it is perfect is by scooping a spoonful of the merengue and turning the spoon upside down, if the merengue does not drop it is ready.
5. Pre-heat your oven to 350 degrees F
6. Cover a cookie tray, or anything similar to that, with waxed paper and using two tablespoons, scoop out little globs and try making them into little balls. If this is hard for you, you can also try using an ice cream scooper and simply scoop it on to the tray. You can make the suspiros any size you want.
7. Pop the tray in the oven for about 20-30 min, or until brown and toasty
8. When ready take the tray out of the oven and let the suspiros cool
9. Now Enjoy!
