Carrot Cake

Me and my family are originally from Brazil and this carrot cake recipe is quite a blast there. One day I was looking through my grandma's recipe book looking for something to make and I stumbled upon this recipe, having already tried quite a few carrot cakes in my lifetime I decided to try it out. It was only later that my mom told me that it was actually a family recipe that my great-grandmother had given  to my grandma and so on until it came to me, or I came to it, whatever. However, there's one problem, I don't have any kids at the moment (hopefully) so decided to pass it on to you guys. Hope you enjoy it.

Ingredients

                     Ingredients for Cake:

• 3 big carrots
• 3 eggs
• 3/4 of a cup of canola oil
• 2 cups of all purpose flour
• 1 1/2 cups of sugar
• 1 tbs of baking powder

                     Directions:

1. Pre-heat your oven to 350 degrees F

     2. Wash and peel all of your carrots, if the carrots aren't quite big      feel free to add some more 

    

     3.  Grate the carrots
  

    

Blend carrots, eggs and canola oil

     4.   In a blender, blend the grated carrots, the eggs and the canola  

oil until smooth

    

     5.   Pour the blended mixture into a big bowl and stir in the rest of the ingredients until blended

    

    6.   Grease your cake pan and pour the batter into it

    

    7.   Pop the pan in the oven and let it cook for 20-25 min

                   

                      Chocolate Sauce Ingredients:

    This is optional but who doesn't love a good chocolate sauce

• 2 1/2  tablespoons of cocoa powder
• 3 tablespoons of sugar
• 1 tablespoon of butter
• 2 tablespoons of milk  

                                              Directions: 

1. Over low heat mix all of the ingredients together until smooth and creamy
2. After the cake comes out of the oven pour sauce over it and decorate as wanted
3. Most important of all Enjoy!
